I love this recipe firstly because it tastes amazing but I also love Hearty Mediterranean Beef Stew for other reasons too.  It is a crockpot recipe and that means it is easy!!  It is nutritious and it can be easily pre-packaged for the freezer.  Then the ingredients are already prepared for you to pull from the freezer and dump into the crockpot. For those reasons that make this recipe a winner!

I like to pair this recipe with my Mom’s recipe for GRAIN FREE TAPIOCA ROLLS

 

Hearty Mediterranean Beef Stew

serves 12

 

Ingredients 

1 TBS. olive oil

1 pound cubed grass-fed beef stew meat

2 TBS. dried onion

1/2 tsp. cinnamon

1 tsp. dried oregano

1 tsp. garlic powder

1 tsp. dried basil

2 – 15 oz. cans organic diced tomatoes

1 medium-size eggplant cut and cubed

2 large diced carrots

1/2 cup small navy beans

1-quart beef stock or beef bone broth

1-quart water

2 TBS arrowroot powder or cornstarch

 

 

DIRECTIONS 

1. Combine the water and arrowroot powder, stirring until the arrowroot is dissolved

2. Add each ingredient in order of appearance into the stockpot or dutch oven.  Stir.

3. Turn the stew pot on high and bring to a rolling boil.  Then turn down the heat to low and cook for at least 4 hours. You can also do this in the crockpot.  Make sure to stir the pot periodically.

4. Serve hot with a sprig of fresh basil, thyme, or parsley.

  1. Hi Janelle! I’m stopping over from Let’s Get Real today. You know that you had me at crock pot, right? I love these longer cooking crock pot recipes. I can set them up in the morning, go to work, and come home to a house that smells incredible. It’s like having someone cook me dinner when we can just sit down and eat.
