This is the cake I have been making for my husband’s birthday for the last 30 years!  I have never missed a year, he has come to expect it.  Gluten-Free Chocolate Wacky Cake with Chocolate Buttercream Frosting.  Some people refer to this cake as Depression Cake, either way, it is delicious with a capital D. Just looking at this picture makes my mouth water!

We decided to update the cake this year to make it a three-layer cake and it turned out beautifully.  When my children ask what my husband wants for his birthday, he always responds the same.  “I just want some hugs and kisses,” he states.  This year we decided to decorate the top of the cake with some Hugs and Kisses!

 

 

Gluten-Free Chocolate Wacky Cake

Serves 12

 

Ingredients

3 cups gluten-free flour

2 cups sugar

6 TBS. cocoa

2 tsp. salt

2 tsp. baking soda

2 tsp. gluten-free vanilla extract

2 cups water

3/4 cup coconut oil or olive oil

2 TBS. vinegar

 

DIRECTIONS

1. Pre-heat oven to 350 degrees.

2. Combine all ingredients in a large mixing bowl.  Mix on low speed until all ingredients are well incorporated.

3. Pour the batter into a 9x13x2 inch pan or 3 – round cake pans.

4. Bake for 40 minutes for the large pan or 25-30 minutes for the cake rounds.

  2. No guar gum or the other one whose name escapes me at the moment? Or does your gluten free flour blend already contain it? Just curious.

    1. Hi Sharon, I use xanthan gum or unflavored gelatin in my gluten free mix. Hope this helps!
