Gluten Free Lemon Posset

This past May, I was having dinner at my new favorite restaurant Asterisk and had Gluten Free Lemon Posset for dessert.  I had never heard of this treat but decided to try it. I fell in love… When my husband and I celebrated our 28th anniversary I asked to go back to Asterisk and ordered Lemon Posset for dessert a second time.  It was just as creamy and delicious as the first time!
Now, the difficult part came to recreate this amazing dessert and make it gluten-free.
Voila!  Now I can make Lemon Posset at home and so can you!


Serves 6



2 1/4 cups whipping cream

3/4 cup plus 1 teaspoon sugar

5 tablespoons fresh lemon juice or Volcanic lemon juice

2 teaspoon grated lemon peel



    1. Bring cream and 3/4 cup sugar to boil over medium-high heat, stirring until sugar dissolves. Boil for 3 minutes, stirring constantly, adjusting heat as needed to prevent the mixture from boiling over. Remove from heat.
    2. Stir in lemon juice and cool 10 minutes. Stir the mixture again and divide among six 1/2-cup ramekins or custard cups. Cover and chill possets until set, at least 4 hours or overnight.
    3. Mix the remaining 1 teaspoon of sugar and lemon peel in small bowl. Sprinkle on top the pots of possets and serve!
    4. Optional, top with lemon slices or a drop of jam.
