How to roast a chicken, as you know I own chickens but I must confess that not one of my ladies has ever made it to the pot!  Somewhere along the line, they turn into pets with names and that makes it a bit hard to cook them.

Never the less, I love a good slow-roasted chicken!  I can just smell the roast chicken now! 

The best chickens are in my opinion, ones that can roam around the yard, eat the weeds and grass and are supplemented with organic feed.  In other words, they are grass-fed and pasture-raised. So, I would highly recommend that you search your area to find a local farmer that butchers their own chickens.  When you start with the best chicken you will end up with the best meal!

 

 

How To Roast A Chicken

Serves 8

 

Ingredients

1 – 6-pound farm-raised chicken

salt and pepper

1 TBS. butter or bacon drippings

1 medium onion peeled

1 bay leaf

4 cloves of garlic peeled

2 sprigs of fresh tarragon

2 sprigs of fresh rosemary

2 sprigs of fresh sage

 

 

DIRECTIONS 

1. Wash and dry the chicken.

2. Preheat oven to 350 degrees.

3. Place chicken in an enameled roasting pan.

4. Slather the outside of the chicken with butter or bacon drippings using your hands to apply and then sprinkle the outside of the bird with salt and pepper.

5. Stuff the inside cavity of the chicken with the onion, bay leaf, garlic, tarragon, rosemary, and sage.

6. Roast the chicken for 2 hours basting frequently.

7.  Eat!
