Paleo Cinnamon Raisin Bread

Those of us with food allergies have been longing for years to taste a slice of EXCELLENT Paleo Cinnamon Raisin Bread.  I am over the moon to share this delectable recipe with you!  I have based this recipe on my Paleo No Crumble Sandwich Bread so it makes a mean slice of toast.  Toast…you remember that right?

This recipe is gluten-free, dairy-free, sugar-free, nut-free and Paleo.

 

 

Paleo Cinnamon Raisin Bread

Makes 2 loafs

 

Ingredients

1 1/2 cups cassava flour

1/3 cup raw hemp seeds

1/2 cup potato starch flour

1/4 cup coconut flour

2 Tsp. baking soda

1 Tsp. salt

10 eggs

6 TBS. grapeseed oil or olive oil

2 TBS raw apple cider vinegar

2/3 cup raw honey

1/4 cup cinnamon

1/2 cup raisins

 

DIRECTIONS

  1. Preheat the oven to 350 degrees. Oil two bread pans and set them aside.
  2. In the order of the recipe, in a large mixing bowl pour in each ingredient EXCEPT the cinnamon and the raisins.
  3. Mix on low speed until the batter is well incorporated.
  4. Pour half of the batter into two greased bread pans.
  5. Sprinkle with cinnamon and then raisins and then cover with the remaining batter.
  6.  Bake for 4o to 45 minutes.
