I love potato soup!  Especially when the weather turns and there is a chill in the air.  Another reason I love this recipe for Potato Kale and Sausage Soup is that it is so easy to make.  I don’t know about you but I really need easy in my life right now.  Autumn brings cooler days but also busier ones and that is another reason why I enjoy making this crock pot soup.

Slow cookers are a homemaker’s best friend and I have to admit I sure do love the flavor that comes from simmering your food for a long period of time.  Everything is tender and delicious!

 

MONEY SAVING TIP   Half the amount of meat in this recipe and add a 1/2 cup of root vegetable to the pot.  It will still be flavorful and will lower the cost.

 

This recipe is gluten-free, sugar-free, grain-free, and nut-free!  If you wanted to make this recipe dairy-free you could substitute coconut milk for half and half.  This delicious soup works well for pot-luck dinners too!  Everyone loves the healthy combination of kale, potatoes, sausage, and cream!

 

 

Potato Kale and Sausage Soup

Serves 8

 

Ingredients

tablespoon butter or ghee

2 tablespoons olive oil

1/4 cup dried onion

1 TBS garlic powder

1 package (14-ounces) of gluten-free smoked sausage

4 cups chopped kale leaves (frozen is fine)

salt and fresh ground pepper

1 Tsp. rosemary

3 cups cubed potatoes

1 carton (32-ounces) gluten-free chicken broth

2 cups water

2 cups half and half

 

DIRECTIONS

  1. Melt the butter in a slow cooker on high.
  2. Add the remaining ingredients and stir.  Cover and cook on medium heat for 8 hours.

I like to serve this with my no crumble Paleo sandwich bread…YUM!
