Looking for a crowd-pleasing slow cooker recipe that everyone will love?  I am so excited to share with you my recipe for Slow Cooker White Chicken Chili.

I just made this EASY recipe to take to my Bible Study Celebration Pot Luck, and all the ladies asked for the recipe.  So, Marsha, Sandy, Heather, Shirley, Susan, and Michelle, this recipe is for you! (Each one of you is a treasure to me!)

Slow Cooker White Chicken Chili is gluten-free, grain-free, nut-free, sugar-free, and keto!

 

 

Slow Cooker White Chicken Chili

Serves 12

 

Ingredients 

2 TBS olive oil

1/4 cup dried onion

1 tsp. garlic powder

2 lbs cooked diced chicken

4 cups chicken broth or chicken bone broth

2 (8oz.) pkg. cream cheese

2 1/2 cups fresh or frozen corn

4 cans of cannellini beans

1 TBS lemon juice

3 tsp. cumin

1 tsp. oregano

1/2 tsp. cilantro

1/2 tsp. red pepper flakes

salt and pepper to taste

 

Toppings

grated sharp cheddar cheese

fresh cilantro

 

DIRECTIONS

  1. Turn the slow cooker on high.
  2. Heat the olive oil, garlic powder, and dried onion in the bottom of the slow cooker for 15 minutes.
  3. Add the rest of the ingredients to the slow cooker and gently stir.  Cover and let cook for 4-6 hours at high temperature. Stir twice during the cooking time to incorporate the ingredients.
  4. Serve hot and top with cheddar cheese, fresh cilantro, and a side of homemade gluten-free artisan bread!
