The Christmas season has so much to offer, not the least of which is delicious food that we may not eat for another year!
For a person with food allergies though, it is an accident waiting to happen…how many times have I gotten sick because someone assured me the recipe was gluten-free? Â Too many times to count! Â My solution is to just bring my own food.
I am so excited to present to you this AMAZING recipe for gluten-free Christmas Stollen!! Â You are in for a treat!
This recipe takes a little time but I promise it is worth the effort and you will be enjoying Christmas Stollen right along with everyone else. Â So…put some Christmas Music on and let’s get started!
Gluten-Free Christmas Stollen
Serves 12
IngredientsÂ
1/2 cup orange juice
3 TBS honey
1 cup whole milk or almond milk
1/4 cup warm water
4 large eggs
3/4 cup grass-fed butter or ghee at room temperature
5 cups gluten-free flour mix
1 tsp. xanthan gum
1 tsp. tapioca flour
1/2 tsp. salt
1/4 tsp. mace
1/4 tsp. nutmeg
2 TBS. active dry yeast
grated zest of 2 oranges
grated zest of 1 lemon
1 1/4 cup dried currants
1 1/4 cup golden raisins
1/4 cup chopped dried apricots
1/1/4 cup chopped blanched almonds
powdered sugar for dusting
* OPTIONAL -1/4 cup chopped or grated gluten-free marzipan to the mixture…heavenly!
DIRECTIONSÂ
- In a medium bowl soak the currants and raisins for at least an hour in the orange juice.
- In a small saucepan add the milk and honey and heat on low temperature until warm. Â DO NOT BOIL.
- In a glass measuring cup add the yeast, salt, and warm water and let proof (sit until bubbly).
- Once the first three steps have taken place, the fun starts. Â Dump all the dry ingredients, soft butter, and eggs into a KitchenAid stand mixing
bowl, then add the milk and honey mixture, then the yeast and water mixture, and then the orange juice mixture. Â Add one at a time while mixing on low speed. (I use a dough hook.) Lastly, add the chopped apricots, almonds, and lemon and orange zest.
- You should have a big sticky glob of dough in your bowl. Â With your hands well oiled (I use olive oil but whatever you have on hand will work) divide the blob into two blobs. Â Place each blob onto a pizza stone and shape it into an oval loaf. Â Loosely cover with cling wrap and let it rise until it has doubled in size.
- Once the dough has risen, gently brush it with melted butter.
- Bake in a preheated 375-degree oven for approximately 45 minutes to an hour.
- Let cool and sprinkle with powdered sugar.
