I am picky about my Guacamole.  The fact that it must be gluten-free Guacamole takes it to a whole new level of picky!

. It has to be a certain green color, absolutely no oxidation!

. No tomato.

. Just the right amount of seasoning, not too spicy and not too mild.

. No hard-boiled eggs.

. gluten-free

 

Did you know that one-third of a medium avocado (50 g) has 80 calories and contributes nearly 20 vitamins and minerals, making it a great nutrient-dense food choice?  The avocado is almost the only fruit that contains healthy monounsaturated fat, the good fat! Avocados are naturally sodium, sugar, and cholesterol-free.  Are you ready for some Creamy Deliciousness?

 

 

Gluten-Free Guacamole

Serves 4 (or 2 guacamole lovers)

 

Ingredients

2 ripe Hass Avocados

1/2 TBS. chopped Jalapeño pepper

1/4 cup chopped red onion

2 TBS. chopped fresh Cilantro

2 TBS. lime juice

1/2 tsp.sea salt

 

DIRECTIONS

1. Wash your avocados.  Cut each in half, remove the pits, and scoop out the avocado, removing it from the peel.

2. Combine all ingredients in a large mixing bowl.  On the low speed of an electric mixer, gently combine ingredients until desired consistency.  (I like mine a little chunky.)

3. Serve with good organic corn chips or my favorite grain-free tortilla chipsEnjoy!

  1. Around here, as you may have noticed, you’ll often end up with a dud of an avocado (rotten) and at $1.50 each! When that happens, and I need a certain quantity of guacamole, I purée some thawed frozen peas (uncooked) and add them to the guacamole. With the right balance of lime juice, salt (and maybe a minced clove of garlic) you can’t tell at all. Just don’t let the kids see you do it!

    1. You are a genius Barbara! I never thought of doing that but you do get a bad avocado from time to time…especially here in Ohio. Now, I have a plan!

  2. I’m with you on the no hard-boiled egg! My husband’s from El Salvador, where you get amazing avocados, and they do sometimes put egg in their guacamole…I’m not a fan. Love me some cilantro in guacamole!

  3. I am also a purist with guacamole. I don’t like anything getting in the way of the yummy avocado! I do like a little splash of salsa in my guac though.
