Gluten Free French Pistou Soup

This recipe for Gluten Free French Pistou Soup is a take on the French version of pesto. Oh, boy does it pack in the flavor and the use of the crockpot make it an EASY recipe your whole family will love!  Just dump and go, add a slice of gluten-free french bread and you are all set for a healthy, nutritious and delicious family meal.

This recipe freezes well and is not only gluten-free but sugar-free, keto, nut-free, vegetarian, and grain-free!

 

Gluten Free French Pistou Soup

Serves 10

 

Ingredients 

3/4 cup extra-virgin olive oil, divided

2 cups chopped onions

2 cups chopped leek

1 cup chopped celery

2 TBS chopped garlic

12 cups chicken or vegetable broth

1 15oz. fire roasted red peppers

1 pound lentils or cannellini beans (soaked overnight)

1 cup packed fresh basil

3/4 cup grated Parmesan cheese

1/2 cup fresh parsley

8 medium cloves garlic

1 tsp. salt

1/2 tsp.  ground pepper

1 1/2 pounds Swiss chard or spinach

 

DIRECTIONS 

  1. Turn on the crockpot to high and pour half the olive oil into the crockpot until hot.
  2. Add the onion, leek, celery, and chopped garlic and saute until the onion is clear.
  3. Add the remaining ingredients and cook on high for six hours.  Stir occasionally.
