Some recipes are so old they have become friends. This creamy gluten-free chicken broccoli casserole recipe was given to me by a friend during my first year of marriage.  So, I have been making it for over 26 years.  The flavor combinations are wonderful and there are never any leftovers!

This recipe is perfect to take to a potluck dinner or to a friend that has just had a baby, the creamy deliciousness agrees with everyone. You can pair it with a salad and chocolate brownies for a complete meal.

This recipe is gluten-free, nut-free, Paleo, and sugar-free!

Creamy Gluten-Free Chicken Broccoli Casserole

 

Serves 8

 

Ingredients

1 pound cut-up cooked chicken

1 large bag of frozen broccoli florets

3 to 4 cups homemade cream of chicken soup 

1 medium diced onion

2 stalks of celery thinly sliced

3/4 cup mayonnaise 

1 tsp. lemon juice

1 tsp. dried basil

1/4 cup melted butter

4 cups grated mozzarella cheese

1 1/2 cups gluten-free bread crumbs

 

DIRECTIONS 

1. Combine all the ingredients EXCEPT the last three (butter, cheese, and bread crumbs).  Mix well and spread in a 11x13x2″ casserole dish.

2. Melt the butter and combine it with the bread crumbs.

3.  Sprinkle the grated mozzarella cheese on top of the casserole and then top with buttered bread crumbs.

4. Bake in a 350-degree oven for 30 minutes or until the sides bubble.

    1. Thanks for your comment Barbara! Here is an idea…Make a full batch and then divide it and put it in the freezer for lunch. It freezes well. Enjoy!
