Gluten-Free Creamy Poppyseed Chicken Casserole, just say that three times, and your mouth begins to water! This recipe has stood the test of time and although I started out making it with the gluten in it, when we made the change it was an easy recipe to convert to gluten-free.  It is a delicious meal and I have never had anyone, not like it!  How’s that for tasty?

I like to pair this creamy casserole with a green salad filled with lots of fresh veggies in it.  They go wonderfully together!   If you are feeling really ambitious a gluten-free apple cobbler would go great for dessert!

Gluten-Free Creamy Poppyseed Chicken Casserole

Serves  8

 

Ingredients

6 cups chopped chicken

2 cans gluten-free cream of chicken soup  (or my homemade cream of chicken soup recipe doubled)

1 – 16-ounce carton of sour cream

2 TBS. poppy seeds

3 cups gluten-free breadcrumbs

1/2 cup butter or ghee

 

DIRECTIONS

1. Combine the first 4 ingredients and pour into a buttered casserole dish.

2. Combine melted butter and bread crumbs and sprinkle over the chicken mixture.

3. Bake at 350 degrees for 30 minutes.
