These are our family’s FAVORITE gluten-free oatmeal cookie!  So delicious!  We make them quite often and they are great served with milk or almond milk.  I also have them with afternoon tea.  It is both the texture and the taste of these delectable cookies that will capture you!  I present to you, the one and only Gluten-Free Oatmeal Cookies!

For the record, my daughter Sarah is the best at making these delightful oatmeal cookies, I don’t know what she does or how she does it but they always taste better when she makes them!

One cup of cooked oatmeal has 166 calories, 5.9 grams of protein, 3.6 grams of fat, and 28.1 grams of carbohydrates, including 4 grams of fiber, or 16 percent of the daily value.  This is another great reason to make oatmeal cookies today!

 

 

The One and Only Gluten-Free Oatmeal Cookies

Makes 8 dozen

 

Ingredients

2 cups gluten-free flour mix or (1 cup almond flour + 3/4 cups cassava flour + 1/4 cup potato starch)

1/2 tsp. baking powder

1/2 tsp. baking soda

1/2 tsp. cinnamon

2 sticks of grass-fed butter at room temperature

2 cups packed brown sugar or (2 cups coconut sugar)

2 large eggs

3 tsp. gluten-free vanilla

3 cups gluten-free oatmeal

 

DIRECTIONS

1. Preheat the oven to 350 degrees.

2.  Combine all ingredients in a large mixing bowl.  Mix on low speed until well incorporated. The dough will be firm.

3. Using a cookie scoop or a tablespoon drop cookie dough onto a parchment-lined cookie sheet.

4. Bake cookies for 14 minutes and cool.
