For the record, these Delicious Grain Free Protein Bars have taken a while to get right!

These bars are grain-free and dairy-free, gluten-free, sugar-free, and loaded with nutrition, and an added bonus, they taste great!  The great part is what took so long to get right.

One of my daughters is a ballet dancer.  She is also allergic to all grains with the exception of non-GMO organic corn.  She is allergic to sugar and a whole host of other foods.  Keeping her body in good health without grain is a challenge.  I have always loved a good challenge, though!

Grain-Free Protein Bars make a wonderful breakfast that our whole family enjoys, especially when on the run. My favorite part about these bars is that they are so easy and quick to make!

 

Delicious Grain Free Protein Bars

Serves 12

 

Ingredients

1/4 cup ghee or coconut oil

2 large eggs

1/2 cup coconut crystals

1/4 cup honey

1 cup tahini

3 TBS. ground flaxseed

1/2 cup arrowroot powder

1/2 tsp. baking soda

1/2 tsp. Himalayan salt

2 tsp. gluten-free vanilla extract

1/4 cup dried fruit of your choice

1/4 cup coarsely chopped nuts

 

DIRECTIONS

  1. Preheat the oven to 350 degrees.
  2. Mix all ingredients on low speed.
  3. Pour batter into a Pyrex 7″x 11″ Oblong Glass Pan.
  4. Bake for 20 minutes.
