Grain Free Protein Bars have taken a while to get right!
These bars are grain free and dairy free, gluten free, sugar-free, loaded with nutrition and an added bonus, they taste great! The tasting great part is what took so long to get right.
One of my daughters is a ballet dancer. She is also allergic to all grains with the exception of non-GMO organic corn. She is allergic to sugar and a whole host of other foods. Keeping her body in good health without grain is a challenge. I have always loved a good challenge though!
Grain Free Protein Bars make a wonderful breakfast that our whole family enjoys, especially when on the run.
GRAIN FREE PROTEIN BARS
Serves 12
Ingredients
1/4 cup ghee or coconut oil
2 large eggs
1/2 cup coconut crystals
1/4 cup honey
1 cup tahini
3 TBS. ground flaxseed
1/2 cup arrowroot powder
1/2 tsp. baking soda
1/2 tsp. himalayan salt
2 tsp. gluten-free vanilla extract
1/4 cup dried fruit of your choice
1/4 cup coarsely chopped nuts
DIRECTIONS
- Preheat the oven to 350 degrees.
- Mix all ingredients on low speed.
- Pour batter into a Pyrex 7″x11″ Oblong Glass Pan.
- Bake for 20 minutes.
