Oh, how I love a good muffin!

A healthy, good, muffin is even better. I am excited to share with you a new recipe based on an old classic Paleo Banana Nut Chocolate Chip Muffins. Let’s face it the addition of chocolate chips to most any recipe makes it better. I have used Enjoy Life Mini Chocolate Chips for this recipe.

A medium-sized banana has about 105 calories.  Bananas contain nutrients that moderate blood sugar levels and are a natural sweetener. Bananas are rich in pectin and loaded with fiber too.

 

Paleo Banana Nut Chocolate Chip Muffins

Makes 24

 

Ingredients

 

8 fresh eggs

1/3 cup raw honey

1 TBS. apple cider vinegar

1 TBS. gluten-free vanilla

1/4 cup softened grass-fed butter

1/4 cup avocado oil

2 drops cinnamon essential oil

1 cup coconut flour

1/2 cup almond flour

1/4 cup coconut sugar

2 tsp. baking soda

1 tsp. salt

6 overripe bananas

1/2 cup coconut milk

1/2 cup chopped walnuts

3/4 cups chocolate chips

 

DIRECTIONS

  • Preheat the oven to 350 degrees.
  • Cream together the oils, butter, honey, and vanilla until its light and fluffy.
  • Add the eggs and apple cider vinegar and mix on low speed until all the ingredients are well incorporated.
  • Slowly add the flours, baking soda, coconut sugar, and salt into the mixture at low speed.
  • Add in the mashed bananas followed by the nuts and finally the chocolate chips to the batter.
  • Using an ice cream scoop fill 24 muffin tins with the batter. Bake at 350 degrees for 20 minutes or until a toothpick comes out clean.

 

*This recipe also makes two loaves of Paleo Banana Nut Chocolate Chip Bread.  Bake at 350 degrees 1 hour and 45 minutes.
