What makes this recipe for GRAIN-FREE BAKED ZITI so special? Well, it is first and foremost absolutely, incredibly scrumptious!!  It also happens to be gluten-free, grain-free, and sugar-free.  This recipe proves without a shadow of a doubt that you can eat allergy-friendly foods that also taste amazing.

The cherished Ziti recipe came from my childhood in New Jersey, where as far as I am concerned the best Italian dishes are made!   Growing up my Mom made this recipe for our family frequently. I have made a few adaptions to make it allergy-friendly.  This is also my “go-to” dish for when I am making a meal to take to another family.

Add a little extra nutrition by mixing in a half a pound of fresh spinach!

 

 

Grain-Free Baked Ziti

Serves 8

 

Ingredients
1 pound Red Lentil Pasta or Pea Protein Pasta

2 – 15-ounce cans of organic tomato sauce

1 TBS. Italian Seasoning or Tuscan Seasoning

1 TBS. garlic powder

1 pound Mozzarella cheese

1 pound Ricotta cheese

1/2 cup Parmesan cheese

1 1/2 pound ground beef

optional –  1/4 cup gluten-free pepperoni

 

DIRECTIONS

1. Preheat the oven to 350 degrees.

2. Brown hamburger on medium heat and set aside.

3. Bring 2 quarts of water to boil in a large pan and cook pasta for 8 minutes.

4. Combine all ingredients EXCEPT 1/2 cup Mozzarella cheese.  Stir well and pour into an 11×13 casserole dish.

5. Top with remaining Mozzarella cheese and bake covered with foil for 1 hour.  Uncover and bake for 15 more minutes.

  2. Mmmm, that looks delicious. I have my own favorite ziti but I use a bechamel sauce, which calls for white flour. Would you sub cornstarch? I’ll have to check out the uddo’s pasta, too!
