What does coleslaw make you think of?  Picnics and warm weather, children playing outside and barbeque!  Creamy Keto Coleslaw is a wonderfully delicious recipe that is perfect for any weather.  It does not have to be warm outside for you to thoroughly enjoy it.  

Why is this particular recipe for Creamy Keto Coleslaw the best?

I think it is the fact that you let this coleslaw sit for at least an hour before serving that makes it so good.  That and the creamy part!  The word creamy denotes that there should be cream in this recipe but there is not.  The creaminess comes from the mayo.  I know that you are going to LOVE this recipe!!

This recipe is gluten-free, sugar-free, keto, nut-free, dairy-free, and paleo.

 

Creamy Keto Coleslaw

Serves 6

 

Ingredients

1/2 head purple or green cabbage thinly sliced (about 1 pound)

1 small red onion thinly sliced

1 carrot grated

3/4 cup mayonnaise or paleo mayonnaise

1/4 cup raw apple cider vinegar

2 TBS maple sugar 0r 2 TBS Swerve

2 tsp. sea salt

1/2  tsp. dried mustard

1/4 tsp. freshly cracked pepper

1/4 tsp. onion powder

1/4 tsp. ground coriander

 

DIRECTIONS

  1. Combine all ingredients in a glass or stainless steel bowl and mix well.
  2. Store covered in the refrigerator for at least an hour.

  1. I love coleslaw but I don’t eat mayonnaise any more. Any ideas for swapping out? I keep thinking I should try an avocado instead but not sure. Thanks for sharing on Let’s Get Real Friday Link Party.

      We just purchased avocado mayonnaise to try and it was great! You could definitely substitute creamy avocado in this recipe…let me know how it turns out.
