This recipe for Gluten-Free Parmesan Spinach Dip is an old family favorite.  Why?  Because I have never had leftovers, never, not once!  At my daughter’s recent graduation party there were two dishes that were licked clean and yet once again my Parmesan Spinach Dip was one of the recipes.  To find out what the other recipe was Click HERE!

What is my favorite part of the dish beside the taste?  It is a dump, mix, pour and bake recipe!  EASY!

An added bonus, this recipe is gluten-free, grain-free, and sugar-free.  And did I mention that kids love it?   It is high in protein and loaded with spinach which kids usually are not a fan of.  They like it in this dish though.

 

Gluten-Free Baked Parmesan Spinach Dip

Serves 12

 

Ingredients

1 package (10 oz.) frozen chopped spinach or kale, thawed

1 1/2 cup mayonnaise

1 package (8 oz.) cream cheese

1/4 cup dried onion

1 Tsp. onion powder

1/4 Tsp. red pepper flakes

1 cup grated parmesan cheese

1/8 teaspoon pepper

1/2 teaspoon paprika or turmeric

 

Directions

  1. Squeeze spinach to remove all the liquid. With a mixer, beat spinach, mayonnaise, cream cheese, onion, garlic, 1 cup parmesan cheese, red pepper flakes, and pepper until thoroughly combined.

  2. Pour the mixture into a square or circular baking dish. Sprinkle evenly with 2 tablespoons parmesan cheese and the paprika.

  3. Bake in a 350° oven until hot in the center, slightly bubbling, and lightly browned on top for 25 to 30 minutes.  Check every 15 minutes.

    I hope that this recipe will become one of your favorites to serve to your family (It makes a great lunch with fresh fruit and tortilla chips or crackers) or as a future entertaining staple!
