Paleo And Keto Aebleskivers!  It’s hard to confess but I always thought Aeblesivers were Swedish.  I had always eaten them in association with my family’s Swedish heritage.  I just always assumed that everything GOOD came from Sweden, the homeland of my ancestors.

I was wrong…

Aebleskivers, the delectable, airy, donut-like creations are actually from Denmark!

 

 

 

Paleo And Keto Aebleskivers

 

Serves 8

 

Ingredients

4 egg whites

2 egg yolks

3 TBS maple syrup or 1 tsp. liquid stevia

4 TBS melted butter or avocado oil

13.5 oz can of organic coconut milk

13.5 oz. water

2 tsp. almond extract

1/2 tsp. vanilla extract

1/2 tsp. apple cider vinegar

1 tsp. baking soda

1/4 tsp. cardamom

1/2 tsp. salt

2 cups cassava flour

 

Supplies 

cast iron Aebleskiver pan

toothpick or fork

 

Toppings

  • cinnamon and coconut sugar
  • powdered Swerve
  • serve with applesauce or jam

 

DIRECTIONS

Heat the cast iron Aebleskiver pan on medium heat.

While the pan is heating, whip the egg whites in a large bowl until soft peaks form.

In a separate bowl, add the remaining dry ingredients and whisk to make light and airy.

Add the wet ingredients.  Mix on low speed until the ingredients form a thick batter.

With a rubber spatula fold the egg whites into the batter.

Melt butter or avocado oil in the circles of the pan.

With an ice cream scoop, drop batter onto the hot pan.

Using a toothpick or a fork turn the Aebleskiver three times to achieve a golden-brown crust on all sides.

Let cool for a minute and roll in either powdered Swerve or cinnamon and coconut sugar.  Serve with a side of jam or applesauce.
